I just wanted to prepeare for any drive failure in the future and wanted to get an idea of how a database could be restored from a backup (which is performed daily).
How would I instruct Orthanc to look at the restored database files?

I would highly suggest you to try and restore your backup on another Orthanc server, and ideally give back to the Orthanc community by sharing your findings.
